GF coconut sugar cookies
This time of year offers an invitation to enjoy group cooking projects and make creative foods that also feel wholesome to the body. I love this recipe, inspired by the Baking at Home cookbook, because it’s delicious and family friendly.
GF Coconut Sugar Cookies
You will need:
1/3 cup butter or coconut oil, at room temperature
1/3 cup coconut sugar
1 teaspoon vanilla extract
1 egg
2 cups blanched almond flour
1/4 cup arrowroot flour
1/4¼teaspoon each: cinnamon, baking soda, and salt
In a large bowl, cream together the butter/coconut oil and coconut sugar.
Add the vanilla and egg and continue and mix well.
Stir in the almond and arrowroot flours, baking soda, cinnamon, and salt until a dough forms.
Form the dough into a ball and then flatten into a circle. Wrap in plastic wrap and refrigerate overnight.
Preheat the oven to 350 degrees F and line a large baking sheet with parchment paper.
Place the dough on a separate sheet of parchment paper and roll out about a half inch. Use cookie cutters to cut out shapes, then place cookies on the parchment lined baking sheet.
Bake for 8 to 10 minutes, or until the cookies are barely browning.
Remove from the oven and cool for 15 minutes. If you lift the cookies after about 5 minutes and place them on a wire rack to cool, you can re-use the same piece of parchment paper to bake more batches.
If the dough becomes tacky, put it in the freezer for 5 minutes and then roll it out again.
You can decorate the cookies after they have cooled for 15 minutes.
