turkey burgers with shredded salad
I love this time of year because it means outdoor cooking. It’s so satisfying to me to cook over a fire pit or grill.

TURKEY BURGERS
You will need:
1 pound ground turkey (antibiotic / hormone free)
1/2 small red onion, diced
2 tablespoons cilantro, minced
1/2 teaspoon ground ginger
1/2 teaspoon garlic powder
2 teaspoons tamari
1/4 teaspoon sea salt
Olive oil
To make the burgers, mix all the ingredients together in a large bowl.
Heat a grill or skillet over medium heat and brush or drizzle with oil.
Using wet hands, form the mixture into 6 patties. Cook on each side for about 4 minutes or until cooked through. Transfer to a plate.
Serve with shredded beet and carrot salad.
SHREDDED BEET AND CARROT SALAD
You will need:
2 cups carrots, shredded
1/2 cup beets, shredded
1/4 cup olive oil
2 tablespoons lemon juice
1/2 teaspoon each: cumin and coriander
1 teaspoon salt
1/2 cup chopped parsley
1/2 cup chopped cilantro
Shred beets and carrots with the shredder attachment of your food processor. Transfer them to a mixing bowl and add all the other ingredients. Mix well.
Refrigerate for at least an hour or overnight and enjoy!
